Jigarthanda is a very famous drink in madurai and some other parts of Tamilnadu. It is their favourite because of its taste and nature of ingredients. The word Jigarthanda has its origin from two hindi words, Jigar(Heart), Tanda(cool) and it is merely translated as heart cooler. Being a hindi word it is not north indian food. Being a food which is very cool it also has the name Jil Jil Jigarthanda. The name is provided as such as it refreshes the heart of tamilians who worry with hot climate in Madurai.

Boil the milk still it gets fainted. Add sugar as mentioned earlier and if you need more you can it by small quantity and stir it well. Switch of the stove and allow it to cool and keep it in a fridge. Take another glass of milk and boil it with Javarisi in another saucerpean and after boiling allow it to cool seperately. Now you should prepeare Agar Agar which is a kind of edible algae and make it in the form you need in small sizes.
Now take a glass tumbler pour the coll milk with sago and then add agar afar jelly. Add Nannari syrup if available else use rose syrup. Now pour another boiled milk kept seperately. Finally place a scoop of icecream above all of it.
