Sevai or Idiyappam - How to Make Home Made Tamil Recipe Sevai
Tamil Nadu Special Recipe Sevai which is popularly known as Idiyappam or rice noodles. Sevai or Idiyappam is a very healthy breakfast which is very soft, thin and very light to digest and is very good for diabetic patients. Sevai or Idiyappam is a Healthy Tamil Recipe as it is steamed cooked, and it can be given to the persons who are suffering from high fever or from diarrhea. If you have this flour ready at hand, it the easiest and quickest Recipes of all. Nowadays instant Sevai flour or instant Idiyappam packets are readily available in supermarkets and you can make use of it and you can make out your favorite variations out of it.
This Tamil Recipe helps you to prepare different variations in Sevai like Puli Sevai, Lemon Sevai, Tomato Sevai, Coconut Sevai and Vegetable Sevai.
Traditional Method of How to Make Tamil Recipe Sevai or Idiyappam or String Hoppers: Ingredients Required to Make Tamil Recipe Sevai or Idiyappam:
Raw rice - 3 cups Salt to taste Water - approximately 3 cups
Method One (Traditional Method)- How to Make Tamil Recipe Sevai or Idiyappam or String Hoppers
1. Soak the rice for an hour and drain the water.
2. Pound the rice and sift in a fine seive.
3. Roast the rice flour and again sift it.
4. Add salt to boiling water and mix the boiling water in the rice flour using a kitchen ladle.
5. Add enough water to make a soft dough.
6. Put the mixture in a 'Sevai Nazhi' or Idiyappam mould with fine holes (any kind available in the market).

7. Press to make thin noodles on wet cloth spread on idlli plate.
8. Steam in an idlli steamer or on pressure cooker and steam it.

9. Once they are cooked, pour cold water over them and drain immediately to avoid sticking to each other.
10. Your Tamil Recipe Sevai or Idiyappam is ready to relish with coconut milk.

Method Two: Easy Way to Make Tamil Recipe Sevai or Idiyappam or String Hoppers: Soak the rice for 2 to 3 hours. Grind it in wet grinder into a very fine paste like what we do for idlli batter. Add salt to taste. Grease the idlli plate with oil and pour the batter into it and steam it. Use a sevai maker to press the cooked idllis and press it. Make sure the idllis are hot when you do this. Now the Tamil Recipe Sevai or Idiyappam is ready in minutes without much strain.

Tamil Recipe Puli Sevai or Tamarind Sevai with Cooked Sevai or Idiyappam: Ingredients Required for Tamil Recipe Puli Sevai or Tamarind Sevai:
Mustard - 1/2 teaspoon Urad dhal - 1/2 teaspoon Red chillies - 2 or 3 (to your spicy level) Extracted Tamarind Juice - 1 tablespoonful Curry leaves - a few Oil - 1 teaspoon Salt to taste
Method: How to Make Tamil Recipe Puli Sevai or Tamarind Sevai:
Heat oil in a pan. Add mustard and urad dhal. When mustard stops crackling, add and fry curry leaves and red chillies for a while and add extracted tamarind juice and boil them by adding little water till the raw smell goes off. Add salt to taste. Then add the cooked sevai or idiyappam and mix them well and garnish with fried groundnuts. Now your Tangy Tamil Recipe Puli Sevai or Tamarind Sevai is ready to eat.
Tamil Recipe Lemon Sevai with cooked Sevai or Idiyappam: Ingredients Required for Tamil Recipe Lemon Sevai:
Oil - 1 teaspoon Mustard - 1/2 teaspoon Bengal gram dhal - 1 teaspoon Green Chillies finely Chopped - 1/2 teaspoon Lemon extract juice - 1 1/2 teaspoon Turmeric powder - 1/2 teaspoon Curry leaves - a few Asafoetida - a pinch. Salt to taste
Method: How to Make Tamil Recipe Lemon Sevai:
Heat oil in a pan. Add mustard, when it stops spluttering, add bengal gram dhal, green chillies, asafoetida and curry leaves. When fried remove from heat and add the lemon juice extract along with a pinch of turmeric powder and salt to taste. Add the cooked sevai and mix. Now your Healthy Tamil Recipe Lemon Sevai is ready. Garnish with coriander leaves. It is especially good for pregnant women and diabetic patients.
Tamil Recipe Tomato Sevai with cooked Sevai or Idiyappam: Ingredients Required for Tamil Recipe Tomato Sevai:
Oil - 1 teaspoon Mustard - 1/2 teaspoon Bengal gram dhal - 1 teaspoon Green Chillies finely Chopped - 1 teaspoon Onion - 1 Tomato -3 Cooked green peas - 1 tablespoon Turmeric powder - 1/2 teaspoon Curry leaves - a few Asafoetida - a pinch. Salt to taste
Method: How to Make Tamil Recipe Tomato Sevai:
Heat oil in a pan. Add the mustard and bengal gram dhal. When they stop spluttering, add asafoetida, chopped green chillies and finely chopped onions with a pinch of turmeric powder and fry till light brown. Add chopped tomato and stir well. Add cooked green peas and salt to taste and stir well. Now mix this with cooked sevai to make Tasty Tamil Recipe Tomato Sevai.
Tamil Recipe Coconut Sevai with cooked Sevai or Idiyappam: Ingredients Required for Tamil Recipe Coconut Sevai:
Oil - 1 teaspoon Mustard - 1/2 teaspoon Urad dhall - 1 teaspoon Green Chillies finely Chopped - 1 teaspoon Grated Coconut - 1 to 2 tablespoonful Cashewnuts(optional) - 4 to 5 Curry leaves - a few Asafoetida - a pinch. Salt to taste
Method: How to make Tamil Recipe Coconut Sevai:
Heat oil in a fry pan and season mustard seeds, urad dhall, green chillies, asafoetida, curry leaves and cashewnuts. Add grated coconut and salt to taste and fry till they turn light brown. Remove from heat and mix with cooked sevai to make a Delicious Tamil Recipe Coconut Sevai.
Tamil Recipe Vegetable Sevai with Cooked Sevai or Idiyappam: Ingredients Required for Tamil Recipe Vegetable Sevai:
Oil - 2 teaspoon Mustard - 1/2 teaspoon Cumin - 1/2 teaspoon Onion - 1 Carrots - 2 Green peas - 1 tablespoonful Potato - 1 Brinji Leaf - 1 Green Chillies - 2 to 3 Salt to taste
Method: How to Make Tamil Recipe Vegetable Sevai:
Heat oil in fry pan and add mustard, cumin seeds, Brinji leaf. Fry with added onion, chopped green chillies, potato, green peas, carrot and fry till the vegetables becomes tender. Add salt to taste. When cooked well mix with cooked Sevai to have a Nourishious Tamil Recipe Vegetable Sevai.
