    How to prepare tamilnadu sambar?

    Sambar in Tamil Nadu has 2 meanings.

    One is the nick name of famous tamil actor Gemini Ganesan.

    And other is, as we all know, a dish.

    Recipe for preparing Sambar:

    * Water - half litre
    * Puli - 5 to 8 pieces
    * Turmeric powder - 1 teaspoon
    * Chilli powder - 1 teaspoon
    * Salt - 1 teaspoon
    * Curry leaves - 10 to 15
    * Corriander leaves - 5 to 10
    * Pepper
    * Vegetables - anything at any quantity - Sliced
    * Toor Dhal - half cup
    * Tomato - 2 - sliced.


    Drop the tamarind (puli) in water. Squeeze it to make juice out of it.

    Now, remove the tamarind. Add the dhal and boil the water. Put the sliced vegetables and add salt, pepper, chilli powder, turmeric powder to it.

    Boil for 10 to 15 mins.

    Add corriander leaves and curry leaves.

    The Dish is ready to serve.

    There are two types of traditional Tamil Sambar.

    One is the simple sambar. For this you need-

    Vegetables like Onion, drumstick, potato, brinjal, ladies' finger etc-cut into cubes or diced.
    Tuvar dhal- half a cup-boiled and mashed
    Tamarind-lemon sized -soaked in water.
    Turmeric powder-a pinch
    Salt-to taste
    Green chillies-3
    Sambar powder-1 tbsp
    Curry leaves-to garnish
    Methi powder-a pinch
    Asafetida-a pinch

    Boil vegetables in tamarind water. Add salt and sambar powder. When the vegetables are cooked, add boiled and mashed tuvar dhal. Simmer till thick, add a pinch of methi powder and asafetida. Remove from fire.

    In a kadai heat oil and splutter mustard. Add curry leaves and split green chilies. Add to sambar. Serve hot with rice and curry.

    The other sambar is the 'Arachuvitta sambar' or 'ground paste sambar'.

    For this you need-

    Vegetables like onion, white radish peeled and cut in circles or the stalks of greens.
    Tuvar dhal-quarter cup-boiled and mashed.
    Coconut-half a cup grated.
    Bengal gram-2 tsp
    Dhania seeds-1 tsp
    Red chilies-3
    Tamarind- lemon sized soaked in water.
    Salt to taste
    Green chilli-1
    Curry leaves

    Boil vegetables in tamarind water. In a kadai heat a little oil and roast grated coconut, Bengal gram, red chilies and dhania seeds. Grind this to a thick paste. When the vegetables are cooked add mashed tuvar dhal and ground paste along with salt.

    Let the sambar simmer on slow fire till the paste loses its raw smell. Switch off.

    In a kadai heat the rest of the oil, splutter mustard add green chili and curry leaves and add to sambar.

    This special sambar is a very good accompaniment to spicy roast potato curry.
